Wild Apricot Tacos with Cilantro Slaw Mango Salsa

Elevate your go-to angle taco compound with Accoutrement Agrarian Blush Salmon, beginning cilantro slaw and spicy-sweet mango salsa.



  • 1 (4oz.) pack Patagonia Accoutrement Agrarian Blush Salmon, Atramentous Pepper, drained
  • 6 - 6-in. blah tortillas broiled one at a time over medium-high calefaction in a frying pan. (Wrap in clean, dry dishtowel to accumulate them warm.)
  • Cilantro Slaw (see compound below)
  • Mango Salsa (see compound below)
  • Avocado and/or radishes, broken (optional)
  • Lime wedges and burst Mexican cotija cheese for garnish

For Cilantro Slaw

  • ½ cup mayonnaise
  • 2 tsp. angel cider vinegar
  • 1 tsp. sugar
  • 1 lime, abstract and zest
  • 2 cups beginning banknote (green or a admixture of blooming red), disconnected fine
  • ¼ cup beginning cilantro leaves, chopped
  • Salt and pepper to taste

Whisk calm mayo, vinegar, sugar, adhesive abstract and zest. Add disconnected banknote and cilantro. Division to aftertaste with alkali and pepper. (Note: Add bathrobe to banknote appropriate afore serving, abnormally if application red cabbage.)

For Mango Salsa

  • 1 accomplished mango, peeled, alveolate and chopped
  • 1 baby onion, diced fine
  • 1 or 2 Serrano or Jalapeno chili peppers, seeded and minced
  • 1 lime, abstract and zest
  • Salt and pepper to taste

Mix calm mango, onion, chili pepper and lime. Division to aftertaste with alkali and pepper.

Putting It All Together

  1. Spoon cilantro slaw into balmy tortillas and top with comatose Salmon. Top with mango salsa (or serve salsa on the side).
  2. Add avocado and radishes if desired.
  3. Garnish with adhesive wedges and burst cotija cheese.
